Healthier Banana Bread

     I bought a bunch of bananas last week intending to use some at Eli's party, but somehow they got missed.  We have eaten several already this week, yet I was still left with 3 overripe bananas.  I remembered seeing something about using applesauce in banana bread, so I headed over to Pinterest where I found this Banana Bread by 8 Weeks to a Better You. It used applesauce and honey instead of oil and sugar.  It also used whole wheat flour, so I decided to give it a shot.  I think it turned out pretty good.  The whole wheat flour changed the texture a little, and I feel like the honey actually made it sweeter.


Ingredients


  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar free applesauce
  • 3/4 cup honey
  • 2 eggs, beaten
  • 3 mashed overripe bananas

Directions

Preheat oven to 350 degrees. Lightly grease a 9x5 inch loaf pan.

In a large bowl, combine flour, baking soda and salt. In a separate bowl, mix together applesauce and honey. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes before removing from pan.
