Baked Sweet and Sour Chicken




When I found this recipe on Life as a Lofthouse I was super excited. I am a big fan of Sweet and Sour Chicken; Nathan however is not. So the first time I made this I made a second dish along with it thinking he wouldn't eat it.  To my surprise he loves it! 

Baked Sweet and Sour Chicken

Ingredients:

Chicken:

3-4 boneless, skinless chicken breasts\salt and pepper
1 C cornstarch
2 eggs, beaten
1/4 C canola oil

Sauce:

3/4 C sugar
4 T ketchup
1/2 C white vinegar
1 T soy sauce
1 t garlic

Directions:

Preheat oven to 325 degrees. Rinse chicken breast in water and cut in cubes. 


Season with salt and pepper. Dip in cornstarch (I just throw mine in a large ziploc with the cornstarch).


Dip in eggs.


Heat oil in skillet and cook chicken until browned but not cooked through.


Place in 9x13 inch greased baking dish.


Mix all ingredients for sauce and pour over chicken.



Bake 1 hour, turning chicken every 15 minutes.  This is the annoying part of the recipe, coming back every 15 minutes, but it turns out so yummy. We just served it with white rice and steamed vegetables though because we are not fried rice fans.  


And all my kids eat it! Bria calls it sweet chicken; it isn't really that sweet; I think she just heard me call it sweet and sour chicken and missed the sour part.
