This is a recipe I came up with one night when I just wanted something easy that everyone would eat. You notice I didn't say healthy; I said easy. I am sure one of the brilliant cooks out there could revamp it into something a lot healthier, but it is YUMMY!
Ingredients:
1 lb boneless, skinless chicken breasts cut into chunks
6ish red potatoes cut into chunks
onion salt to taste
1/4 to 1/2 C melted butter
1 pkg ranch dressing mix
bacon
cheese
You can pretty much change the amounts you use however you want. If you have more chicken or potatoes go on the high side of the butter; if you have less go on the low side.
Here is the super easy directions:
Spray a 9x13 inch pan with cooking spray.
Add chicken, uncooked bacon (I usually use beef, but only had turkey bacon bits today), and potatoes. You can peel the potatoes if you want, but again, I was going for easy. Besides, red potato skins are pretty soft.
Mix melted butter and ranch.
Pour butter mix over chicken and toss to coat.
Cover with foil and bake at 350 degrees for 45 minutes (longer for more, shorter for less).
Uncover sprinkle with cheese, I used cheddar. Again your amount depends on your liking.
Bake 5-10 minutes more.
Maybe not gourmet or even incredibly. but it is easy and yummy. Everyone eats it great, and some days that is just what you need!
